THE SPICE OF LIFE - Cinnamon - CassiaCinnamon and Cassia are different spices harvested from the inner bark of two closely related tropical trees. Ceylon Cinnamon, indigenous to Sri Lanka, is the true cinnamon. In America, Cassia is what is known and used generally as cinnamon, and is grown and cultivated in various countries including China and Vietnam.
The primary differences between the two are: True Cinnamon (Ceylon) is mellow and soft with citrus notes; whereas, Cassia is sharper and sweeter in aroma and taste. Ceylon Cinnamon is especially good with blueberries, apples and other fruit.
Most people know that both Cinnamon and Cassia are found in many traditional sweets, cakes and desserts. Remember too that they are perfect for many savory dishes and spice blends like Chinese Five Spice. These spices can enhance the flavor of: beef, beets, breads, carrots, cereals, chili, chocolate, fruit, pork, pumpkin, rice, squash, and sweet potatoes.
