As we welcome the dog days of summer we get to celebrate August as the national month for Catfish, and for Peaches. Too, there’s a special emphasis on Apples which have a whole week (2nd week, 7th - 13th) dedicated to them this month.
Best of all in August is National More Herbs, Less Salt Day on the 29th. This is also National Lemon Juice Day. How fabulous is that? A splash of lemon juice can brighten the flavor of most dishes. Cook everyday with herbs and spices and a dash of lemon juice, and you won’t miss salt in your food.
Summer’s fresh herbs are now readily available and they’re delicious! When you don’t have fresh herbs use one-half to one-third quantities of dried ones instead. Experiment. Try combinations. THE SPICE OF LIFE - SavorySavory has two varieties: the summer variety (shown here) is an annual herb, whereas the winter variety is a perennial. This herb goes well with bay leaves, fennel, rosemary, sage and thyme (remember - experiment with combinations). Savory has a strong peppery taste. Summer Savory spice is used most often because it’s milder than the winter variety which has a stronger, sharper, more bitter taste.
